Welcome to the "Delicious Home Kombucha Brewing" workshop! In this 3-session course, we will explore the art and science of brewing your own delicious kombucha at home. We will cover everything from the origin and properties of kombucha to tips for keeping your SCOBY and Kombucha culture healthy and happy, and also flavoring techniques to create a variety of unique and tasty brews. The 3 sessions will occur over 4 weeks; Session 1 - June 5, Session 2 - June 19, and Session 3 - June 26.

Session 1: Kombucha Basics

In the first session, we will cover the basics of kombucha brewing. We will learn about the history and origin of kombucha, and the properties that make it a unique and healthy beverage. We will also explore the difference between aerobic and anaerobic fermentation and learn how to manage the process for optimal results. We will cover the materials needed for brewing, the importance of sterilization and sanitation, and how to care for your SCOBY. Finally, we will discuss some tips for flavoring your kombucha and how to create a delicious, fizzy, and refreshing brew.

Session 2: Brewing and Flavoring Techniques

In the second session, we will dive deeper into the brewing and flavoring techniques used in kombucha making. We will discuss the different types of tea and sugar used in brewing, and how to adjust the recipe to suit your taste preferences. We will explore different flavoring techniques, such as adding fruit, herbs, and spices, and how to create a secondary fermentation to enhance flavor and carbonation. We will also cover bottling and coding techniques, as well as scheduling your brewing process to ensure a consistent and delicious brew. For this session students will bring the ingredients they prefer for flavoring their kombucha according to their own preferences.

Session 3: Troubleshooting and Advanced Techniques

In the final session, we will cover troubleshooting and advanced techniques for brewing kombucha. We will discuss what to do when your kombucha turns vinegary, how to adjust pH levels, and how to recover a healthy SCOBY. We will also explore some advanced techniques for flavoring and carbonation, such as using hops and adding nitrogen. Finally, we will share a delicious and unique kombucha recipe for you to try at home.

Overall, this course will provide you with all the tools and knowledge you need to brew your own delicious kombucha at home. You will learn the basics of kombucha brewing, flavoring techniques, and advanced techniques to troubleshoot any issues that arise. By the end of the course, you will have a deep understanding of the science and art of kombucha making, and the skills to create a variety of tasty and healthy brews.

Supplies

Each registered student will need to purchase or bring a 32oz Mason Jar $13.49 (Amazon).

All other materials necessary to create the Kombucha during the 3 session course will be provided.

Katherine Harper Hall Room 212.

After 5:00 parking is free in the open lots. The buidling is opposite the Steam Plant and next to the John Thomas building and Rivers Street Parking Deck.

***All in person course registration is limited to maintain proper social distancing. All participants will be required to follow Appalachian State's "Return to Campus" protocols. In the event that Appalachian State University classes move fully online, all in person Craft Enrichment courses will be cancelled and participants will be provided a prorated refund.

PLEASE NOTE: Most classes meet over multiple weeks. Registration for each class is open until the class fills or until 2 days before the class begins, whichever comes first. If you miss the registration for this session we hope you will consider taking this class the next time it is offered. Cancellation Policy: You may cancel a craft class up to two weeks before the class begins, with a $30 cancellation fee assessed. No refunds are allowed within two weeks of the start date, nor after the class begins.
